Salted Egg Yolk Chicken


Who doesn't like Salted Egg Yolk Chicken? I mean, come 'on... each deep fried chicken cubes are well coated with the savory sauce of fragrant salted egg yolk and aromatic curry leaves. Don't tell me you are not falling for this mouth-watering dish? OMG... they are sinfully yummylicious!


My hubby and I had a good share of this Salted Egg Yolk Chicken. We finished up everything upto the leaves and yes, nothing was spared. The curry leaves were crispy as well and they shared the same savory sauce of fragrant salted egg yolk which makes it so yummy to be eaten just on its own!

By the way, curry leaves are very good for our hair, to keep it healthy and looking black, which is just perfect for me (because I've been spotting few strands of white hairs lately).


SALTED EGG YOLK CHICKEN
Prep Time  : 20 mins
Cook Time : 30 mins
Total Time : 50 mins
Serves       : 2 pax

Ingredients:
1 chicken whole leg, deboned and cubed
1/2 tsp salt
1 egg, lightly beaten
1/2 cup tapioca starch/ corn starch
3 Tbsp butter
3 cooked salted egg yolk, mashed
1 clove garlic, minced
2 bird's eyes chillies, chopped
3-4 springs curry leaves
1/2 tsp chicken granules
1/4 tsp castor sugar

Directions:
1. In a bowl, add salt to chicken cubes and mix well. Add in the egg and let it sit for 10 - 15 minutes.

2. In a shallow dish, add in the tapioca starch. Coat each chicken cubes in the tapioca starch and deep fried till golden brown. Dish up and set aside.

3. Heat a wok till smoking hot. Add in approx. a tablespoon of oil and butter. Stir the butter around until it is half melted. Add in the mashed cooked salted egg yolk. Using your spatula, press the salted egg yolk to further mash them. At the same time, stir them around. The mixture will start to foam and bubbles. Add in minced garlic, chillies and curry leaves. Continue to stir the mixture until aromatic. Add in your deep fried chicken cubes and chicken granules, and castor sugar. Stir well to get all chicken cubes coated with the sauce. Dish up and serve!

Notes:
● To prepare the salted egg yolk, steam it for 5 minutes and mash finely using a fork.

● To get crispy deep fried chicken, fry two times. The first time, over medium high heat until light golden brown. The second time, over high heat until golden brown.

If you are using salted egg yolk powder, replace each salted egg yolk with a tablespoon of powder.
