Mouth-Watering Crabs In Creamy Butter Curry Gravy


This is my first attempt in making this dish and I'm glad that it turned out to be yummylicious! It has the right level of spiciness and aromatic buttery milky flavor with a hint of fragrant curry leaves smell. For those who's afraid of the milky smell from the butter and milk, don't worry, you won't get it in this dish (or it won't be so obvious, depending on your sensitivity towards the 'milky'ness).

In this dish, I've used 2 cans of evaporated milk. You may find this as a lot but this is ensure that I will have enough gravy for dipping later on. And since this is the only dish we are having for dinner, I've added enoki mushrooms and okra for a more complete meal. You may omit the vegetables if you want.

The fried garlic and its oil are truly a great enhancer. It has played a big role in making this dish a yummylicious one. Thank you, Mr. Fried Garlic and Miss Garlic Oil!

And it will be good if you have a claypot and portable stove at home. I used them to serve and to keep the gravy hot. (Be sure to set it at the lowest flame.) We had a great time bonding with our family over this piping hot creamy sauce and hot steamed mantau buns.

How To Clean Crab
This video below was taken in 2008 when i posted my Stir-fry Butter Sauce Crabs recipe in my other blog, AGP. My hubby, back then my boyfriend has offered to show my readers on how to kill & clean a crab. You may refer to this method but my hubby has now discovered an easier method which is to open from the side instead of bottom. Just need to be careful of its spikes. And it will be easier to use the knife than the scissors. (apparently, he's wiser now.. )

(Note: We need to keep the crab alive until the very last moment to maintain its optimum freshness.)



MOUTH-WATERING CRABS IN CREAMY BUTTER CURRY SAUCE

Prep Time  : 50 mins
Cook Time : 40 mins
Total Time : 1 hour 30 mins
Serves       : 3 - 4 pax

Ingredients:
1/3 tub Uncle Wan's Curry Mix
4 medium-sized mud crabs
7 tbsp butter
1 tbsp chopped garlic
1 tsp sugar
1 tbsp fish sauce
1 tsp chicken stock granules
4 sprig curry leaves
8 bird's eyes chili (lightly bruised, keep whole)
2 cans evaporated milk (390g/can)
200ml water
4 slices cheddar cheese slice
Salt to taste

Vegetables of your choice (optional)
Steamed mantau buns (optional)

Fried Garlic
2 tbsp oil
1 tbsp chopped garlic

Directions:
Steam the crabs
1. Clean the crabs thoroughly and arrange on a deep plate. Steam for 8 - 10 mins. You will have roughly 3/4 cup of liquid in the deep plate from the steaming. The process of steaming has infused the crabs with the condensation water, leaving a pure crab-flavored juice. Keep it, you will need this yummylicious juice to enhance your dish.

Fried the garlic
2. Heat oil in a wok and fried the garlic until light golden. Dish up together with the garlic oil and leave aside. (The hot oil will continue to cook the garlic and it will turn deep golden as it cooled).

Making the sauce
3. On the same wok, melt the butter. Add in chopped garlic and bird's eyes chili. Stir fry untill fragrant, approx. 15 secs. Then add in the curry leaves and continue to stir-fry until all flavors has combined, approx. 30 secs. At this point, your whole kitchen will be filled with this aromatic buttery and curry leaves smell.

4. Stir in evaporated milk, water and the pure crab-flavored juice, and bring to a boil.

5. While waiting for the sauce to boil - In another saucepan, fry Uncle Wan's Curry Mix with roughly a tablespoon of oil. Keep frying until fragrant. Off the heat and leave aside, keeping it in the saucepan.

6. When the butter sauce has come to a boil, add in the fried curry mix and stir till combined. If you have vegetables, you may add in at this point. (I used enoki mushrooms and okra)

7. Add in the cheddar cheese slices when the vegetables are partially cooked. Continue to cook until the cheese has melted, then add in the seasoning.

8. Lastly, add in the crabs and gentle stir to coat the crabs, approx. 10 secs. Sprinkle the fried garlic and drizzle with garlic oil. Serve with hot steamed mantau buns.

Notes:
Always buy live crabs, not frozen ones.

● If you have bought the crabs a day earlier from your cooking day, keep them alive in a pail or basin with salted water just enough to submerge their leggies.

● For optimum freshness, cook the crabs within an hour after cleaning them. (Usually, I cook the crabs within half an hour after cleaning them. This is to maintain its freshness and avoid stale smell).

Additional Note:
● Uncle Wan's Sauce gives people restaurant-tasting sauces which they can use at home.

Oh Scooter! Cafe, USJ 21 Subang Jaya

During my late teens, me and my friends (we) love to visit mamak. Mamak used to be the favourite hangout place for everyone. Most of the time, the mamak was full with crowds of all ages. Peoples were happily chit-chatting and munching on 'roti canai' whilst enjoying a cold 'teh ais'.

Now, as time goes, peoples have been turning to a more comfortable place to hang out. A place with good coffee, delicious pastry and cozy ambience. A place known as 'Cafe'. And these cafe are really everywhere. You can see new cafe opening almost every month in every possible area.

For instance, Oh Scooter! Cafe. Oh Scooter! is a newly opened cafe (last year) located in USJ 21. Within that vicinity which is just within few blocks away, there are three more cafe. Sometimes, it is really hard to decide where you want to go.

For me, i would choose a cafe with good coffee and comfortable sofa sitting. If there is a cafe with long sofa like the one in F.R.I.E.N.D.S., I would definitely visit that cafe often with my bunch of good buddies. But of cuz, the coffees must be good and pricing must be reasonable too.

Here in Oh Scooter! Cafe, even tho' they do not have a long sofa but they do have sofa sitting which is equally comfortable, and their coffees are good.

I find this dish quite interesting. It has deep fried macaroni and ham in mayonnaise mixture with charcoal bun, and a bowl of refreshing fruit balls as side. Never thought that by deep frying the macaroni and mixing it with mayonnaise, it could be so yummy~licious. I am going to replicate this dish at home.

Overall, it's a good experience with Oh Scooter! Cafe - good coffees and comfortable ambience. Will definitely laze here again.

Restaurant Little Italy @ Bandar Puchong Jaya

I've read good reviews on this restaurant and wanted to try for quite some time already. But every time when we wanted to go to this restaurant, something else popped up. Finally, on my hubby's birthday, we went to this restaurant together with a few of our good friends.

Soup of the Day: Onion Soup @ RM6.90

I am not sure why this is called "Onion Soup" as it tasted alot more like "Tomatoes Soup". No onion taste, no herbs flavour. Just the usual tomatoes soup. But points given to the hot piping soup served.

I was disappointed with this dish. The deep fried calamari is really tasteless and I thought I wanted to rate this as 2/5. But I added 0.5 point for the salad vinaigrette. The vinaigrette is really flavourful and refreshing. It has slight citric taste which makes it so appetizing.

Usually, I will not order carbonara when dining outside because (I think) I can cook better carbonara. But since this is an Italian restaurant, I thought this would be made the authentic style ~ with eggs and cheese. It turned out to be another disappointment. The sauce was a little too watery. I think they've used whipping cream and then thinned it out with water.

Risotto rice cooked with mushroom and chicken. As you can see from the photo, the risotto looks a little bit too dry. Please correct me if I am wrong. A good risotto should looks more starchy. And the flavor wise for this dish is too bland. Perhaps a good white wine would enhance the taste.

Bake for Happy Kids

Beef Noodle Soup (Pho Bo) @ Kafe Vietnam, Bandar Puteri Puchong

Last month, just a week before I gave birth, I managed to feast on one of my favourite food - Vietnamese Pho Bo. I've been craving for an authentic bowl of Pho Bo for a long time and it was great that we have stumbled upon this restaurant. This restaurant serves authentic Vietnamese dishes like Pho Bo, rice wrapper and the famous Vietnamese Dripped Coffee. When we were there, we saw a couple with a daughter running the business. If we have not mistaken, the Wifey is a Vietnamese, while the Hubby is a local; or both of them are Vietnamese.

Our Beautiful Prince Miguel J. Soo

Hello everyone! You must be wondering why I have been so quiet for the past weeks. Don't worry, I am fine. In fact, I am more than fine. I have just delivered a beautiful baby boy on 21st July. Now I am resting at home and like every chinese woman who just gave birth, am going through my confinement period. There are alot of rules and restrictions to follow during this one-month confinement ~ all for the purpose of restoring back my health and nourishing my body. I've been really busy with my new baby and at the same time giving my attention to my 29 months old daughter. But that doesn't stop me from blogging. :D

Please allow me to introduce our beautiful prince to you guys ~ Miguel Jean Soo, Soo Xung Zheng. Well, he is one anxious baby whom can't wait to come out and play with his big sister Julie. Born at 37 weeks, on 21st July 2015 at 5.19pm, he weighted at 2.3kg and 44cm in length.

THE LABOUR

I had to say this time, the labour was much more painful and tiring than the time when I delivered his big sister Julie. The labour started on 20th July, in the wee hours around 2 something. I noticed that I had bloody discharge when I went to the loo. Having going through what I've gone through in my first pregnancy, I trembled when I see any blood coming out. Immediately I called up my gynae, Dr. Leong WY. Yes, it was 2 something in the morning but he still picks up calls. (He is an attentive gynae. That's why I've been seeing him for all my pregnancies). I told him about the bloody show and he asked me to let him know if it appears again in larger amount. Contractions followed after that. Not wanting to raise any false alarm, I calmed myself down and waited patiently - timing my contractions and observing the discharge. After having two more bloody discharge and my contraction was 5 mins apart, I told my hubby that I might be in real labour. The next thing I did was taking shower while my hubby called my gynae again. Dr. Leong WY asked us to go to the labour ward. And so, we went. It was 6 something morning then.

Upon reaching Tropicana Medical Centre, we went straight to A&E counter. After explaining my situation, I was then wheeled to the labour ward and there I was being monitored using CTG scan whereby two devices were strapped onto my belly. One to monitor my baby's heart rate and the other is to record my contractions. The contractions were consistent and getting more intense with each contractions. Not long after that, my gynae, Dr. Leong, came into the room to check on me. He said I had bloody show but I've not dilated yet. So we shall monitor for 24 hours first. I was like, "Huh! Not dilated yet! But on second thought, it is good also because my baby is only 37 weeks. Let him stay and grow in my tummy for a week more or so first."

Around 15 mins after Dr. Leong left, a nurse came in to check on the CTG graph. She said, smiling "Wow, you have quite a numbers of contractions in such a short time. Maybe you will deliver today". She paused for a moment, looking at me. I think I must have given her a 'shocking' look, she then continues, "Don't worry! We shall continue monitoring you and your baby. Now you just rest on the bed." I exchanged looks with my hubby, whom was with me all the time in the room. We were both in dilemma - unsure of how to feel. Of course we are excited to see our baby boy but at the same time we thought it would be better if he stay in my tummy for a week more or so.

Time passes by, soon it was noon. And the contractions has started to calm down. It wasn't as intense and as frequent, not like in the morning. However, there were still bloody show, bit by bit. The contractions stayed the same for the whole day. It was really stressful as I was lying on the bed the whole time and only come down for the loo. Blessedly, I can watch astro 'Wah Lai Toi' on TV.

At around 7 something evening, Dr. Leong came in to check on me. The nurse updated him about my condition for the day and then Dr. Leong check if I've dilated anot. Again, I still have not dilated. We discussed with Dr. Leong on the next step if by morning I still show no sign of active labour. We then decided to go for induced labour if there is no changes on my current condition. Dr. Leong is very understanding and he knows my condition/ past experiences very well. He respected our decision. It was a really hard decision to made and we have all the fears and worries to support our decision. All we wanted is a smooth delivery and a healthy baby.

Though we have made the decision, we still hoped that I will dilate on my own. And true enough, I have dilated 4cm by the next early morning, followed by more intense contractions. It was really tiring and stressful to wait for the dilation and baby's crowning, not to mention painful as well. I am not sure by what time, maybe 12 noon, Dr. Leong came in to check on me and said I've dilated 5cm. He advised to give me on IV drip to fasten the process. And we agreed to it. The rest of the details were quite blurry as I was really in a lot of pain. Like my previous delivery, I did not take epidural.

The pain gets intensified during the last 2 hours. It was so painful that I cried. (Yes, I cried, like a child.) The nurse whom was in charge of me was very friendly and professional. She told me not to cry because it will used up my energy. She asked me to inhale the gas instead which I did. I've inhaled a lot of the gas but it doesn't help much. At last I had to dump the mask aside because I couldn't concentrate. If I could rate the pain from 1 to 10, the pain was 1,000,000. And the feeling is like you need to poo so badly. Not only that it was painful, I had to endure the pain for 2 hours.

During Julie's, the pain only intensified to 1,000,000 when the water broke, and 20 minutes later I gave birth to Julie. I only needed to push 5 times and Julie was out. But for Miguel, I had to push so hard, and I think I gave a good, hard, long 10 pushes to get Miguel out. It was such a great relief to see my beautiful baby boy when Dr. Leong placed him on my chest. I think it is a common practice for the gynae to immediately put the baby after he/she was out on the mother for bonding. While I bonded with my baby, Dr. Leong cleared up the rest ~ take out the placenta and etc. Words cannot describe how happy I was when I saw my baby boy. The joy after much pain and it's all worth it.

Dear Miguel,
If you are reading this, it means that you are a big boy now. Mummy hope that you are living well and do remember to be happy and grateful all the time. Always know that Mummy & Daddy loves you very much. You can come to us for anything, ok!

And please be good to your sister Julie. Do not fight with each others, instead love, care and tolerate with each others! We love both of you to the moon and back!
