Lemongrass Konnyaku Jelly with Strawberry Bits

Hello everyone! Happy New Year 2016! Hope you guys had a great celebration yesterday. Here, wishing all of you a year full of sweet surprises, love, joy and peace! :)

If you have been following me since my first blog, A Great Pleasure (AGP), you will realized that AGP is more of a personal diary with recipes. I had so much fun reading them because I was reminded of the good times I had. So, in the new year 2016, I've decided to try to include more personal events in my posts. Beside acting as an online recipe diary, this will enable my readers (YOU) to get to know me better and I hope to receive your comments so that I could get to know you better too! :)

Let's start by this post, shall we? :)


So, yesterday, we went to my brother in law, M and his fiancée's, J for New Year Eve Potluck Dinner with J's families. They invited us over, together with mom (in law) and dad (in law). Dad cooked his famous Ku Lou Yuk (Sweet & Sour Pork) while I make this simple konnyaku jelly.

J's families were such great hosts. We had so much fun that I've forgotten to snap some photos of the yummylicious foods. Blessedly, J has captured all the yummylicioius foods and posted on her social media. It was a night to be remembered with great foods and great companies!

The only thing that is missing from this menu is J's brother in law's, P's so called 'fruit juice' which was the best Sangria I've ever had and also the only Sangria I've ever tasted! Hehe...


Now, back to my konnyaku jelly, while I was boiling the lemongrass, the aroma instantly filled my kitchen. It was a very refreshing smell! You do not need to boil the lemongrass for long, once the lemongrass was heated in the water, it will release its aromatic flavor very soon.

A bite into this jelly gives you a citrusy and a mild minty and gingery taste from the lemongrass and as you chew, you will get both the sweetness and sourness from the strawberries. Lemongrass and strawberry are a pecfect match!

Usually, I would prefer to use the konnyaku powder separately but in this recipe, I've used the premix sweetened konnyaku jelly powder (just because that's the only konnyaku powder on shelf). So if you are using the konnyaku powder only, remember to add some sugar and lemon juice. (Please refer to Notes in my recipe.)


LEMONGRASS KONNYAKU JELLY WITH STRAWBERRY BITS

Prep Time  : 15 mins
Cook Time : 20 mins
Total Time : 35 mins
Makes       : 30 pcs

Ingredients:
1100ml water
3 stalks lemongrass
1 packet of Nona Konnyaku Jelly Premix 250g
1/2 cup castor sugar (optional - for extra sweetness)
7 pcs large strawberries (small cubes)

Directions:
1. Start by preparing your strawberries - cut into small cubes. If they are too sour, add 1/2 tsp to the cut strawberries and leave in fridge until needed.

2. Cut the lemongrass into 6-7cm length and bruise them. In a medium pot, bring water with the bruised lemongrass to a boil.

3. Once it reached to a boil, lower the heat to medium and add in castor sugar. Continue to let it simmer for another 10-15 mins.

4. Strain the lemongrass water, you should have 1000ml of lemongrass water.

5. Prepare your molds by adding the strawberries bits.

6. On medium low heat, boil the lemongrass water. Gradually add in the premix konnyaku powder as you stir. Once it has boiled, off the flame and continue stirring until the bubbles subside or disappear.

7. Carefully pour the mixture into your molds and let it set in refrigerator for 3-4 hours.

Notes:
● If you are using the konnyaku powder (not the premix), add 220g of castor sugar in total and 1/2 tsp of lemon juice. Before combining with water, mix the konnyaku powder with sugar first. This will break down the starch in konnyaku powder and less chances of creating any lumps.

● If you want the strawberries bits to set on the surface of the jelly when you turn them over, pour the mixture halfway and let it cool for 1 minute, then continue pouring till end.

Smooth Soya Bean Pudding with Longan


This recipe was published online in my first blog, A Great Pleasure (AGP) in 2007. But due to some error loading my AGP now, I am going to jot down the recipe in yummy~licious as well. Hopefully I will be able to fix the bugs at AGP soon or else all my recipes over there will not be able to be viewed forever.

I used to dislike making this dessert because sometimes I will get curdly looking jelly instead of the smooth looking ones. Through many times of making it, I've found a failure proof method and it has never been easier since then.

The ratio of liquid to agar-agar powder is just the right amount to give this pudding a soft and smooth texture. My hubby love this texture, he said it is soft and smooth as 'Tau Fu Fah'. You can play along with the liquid amount to achieve the texture that you wanted. Remember to adjust on the sugar too, or else it will be too sweet or not sweet.

I've also added lemon juice in my pudding because I found that it has highly elevates the flavour of the soya milk and gives this pudding its distinctive taste. If you don't want, you can omit the lemon juice but I would recommend that you give this a try first. I think you'll love it!

SOYA BEAN PUDDING WITH LONGAN

Prep Time  : 5 mins
Cook Time : 15 mins
Total Time : 20 mins
Makes       : 27 small tubs

Ingredients:
1 pkt Swallow agar-agar powder
1000ml soya milk (without sugar)
1200ml water
475g castor sugar
4 1/2 tbsp lemon juice (juice from 1 lemon)
4 knotted pandan leaves
1 can longan

Directions:
1. In a small pot, add in sugar and agar-agar powder, followed by pandan leaves and water. Turn on the heat and cook till it boils, constantly stirring.

2. Add in 4 tbsp lemon juice and let it simmer for a few good seconds. Then turn the heat to lowest.

3. Slowly pour the soya milk into the mixture and stir till well combined. Off the heat.

4. Pour into desired moulds and let it cool for 15 mins, or until the jelly has slightly set.

5. Separate the longans from the syrup. Add 1/2 tbsp lemon juice to the syrup and stir well.

6. Add in 2 longans and around 1/2 tbsp longan syrup on each tub and set in refrigerator. Serve chilled.

Notes:
● You may use any brand of agar-agar powder as long as you measure it @ 10g.

● If you pour the soya milk too fast or too high to the mixture, you might create more bubbles which we do not want in a smooth looking pudding. If your mixture has a lot of bubbles, you can scoop the bubbles out first before pouring to the mould.

Refreshing Coconut Jelly

It has been very hot at our side these days, with an average temperature of around 36°C. I thought what other great way to refresh ourselves with a cooling thirst-quenching coconut jelly? I have been having these 2 packets of 'Happy Grass' coconut jelly powder in my pantry since early this year. Was wanting to make them during my CNY reunion but was too busy with other dishes back then. Now is a great time to make them!

Coconut Jelly

Actually I wanted to thank my future younger sister in law for introducing this brand to me. The jelly is really nice, with just the correct texture. Normally, you'll see Malay stalls selling these kind of jelly. For a small tub like this, it will cost around RM0.50/tub. And I've calculated my cost, it is around RM0.30/ tub. So, RM0.50/tub is really quite reasonable.

But of cuz, if your families love eating coconut jelly, making this at home is such a breeze and one packet of jelly powder can yield up to 40 small tubs. It is always best to serve your families with your homemade food which is made with love.

For the coconut juice and flesh, I've bought mine from the roadside vendor. Just ask the vendor to pack the juice and the flesh separately. And remember to ask the vendor not to add any sugar syrup. I've got the coconut juice at 2000ml. So I only added 1000ml more to it to make 3000ml.

If your place don't have any vendor selling fresh coconut juice and you need to buy from the hypermarket, then you need to adjust the sweetness level. I am not sure if you can use all 3000ml of coconut juice. Afraid that it will be too 'coconuty'. However, it depends on the coconut juice. So, if you buying the processed coconut juice, please adjust taste and sweetness yourselves ya!

EASY COCONUT JELLY

Prep Time  : 10 mins
Cook Time : 25 mins
Total Time : 35 mins
Makes       : 38 - 40 small tubs

Ingredients:
1 pkt 'Happy Grass' coconut jelly powder
3 coconut juice (without sugar)
130g castor sugar
Coconut flesh (fine julienne cut)
Water

Directions:
1. Add coconut juice to plain water till 3000ml. Bring to boil.

2. Add in the castor sugar and coconut jelly powder to the solution and cook till sugar dissolved completely.

3. Turn off the flame and pour into moulds. Sprinkle the coconut flesh on top before setting it in refrigerator. Serve chilled.

Notes:
● If you prefer softer coconut flesh, you can cook the coconut flesh together in 'Step 2'. I did not cook mine because I prefer the crunch from the fresh coconut.

● When pouring into moulds, rather than using a ladle; it helps alot if you have a heat-proof jug. That way, you can easily pour the mixture into the small tubs without any spillage.

Fruit Cocktail Jelly/ Agar-Agar

My families love jelly, may it be konyaku jelly, pudding or agar-agar jelly! You can always spot a jelly in our family parties and usually I am the one to make them. Of, coz, it is not only during parties that i make jelly. Like yesterday, the mood just strikes me to make a Fruit Cocktail Agar-Agar Jelly. Have a bite and enjoy! :)

Fruit Cocktail Jelly



FRUIT COCKTAIL JELLY/ AGAR-AGAR
Ingredients:
Fruit Cocktail Jelly 2
1 can of fruit cocktail
225g sugar
10g agar-agar powder
Approx 700ml water

Note: I am using Hosen brand for the fruit cocktail and Swallow agar-agar powder (clear).

Method:
1. FRUIT COCKTAIL: Drain the fruit. Place the fruits in the jelly mould, distribute evenly. Add water to the remaining fruit cocktail syrup so that there is 1 litre of syrup mixture.

2. Combine agar-agar powder & sugar in a pot. Mix well. Then add syrup mixture. Bring mixture to a boil under medium heat, stirring occasionally.

3. Pour agar-agar mixture to the prepared jelly mould. Leave to cool for 30 mins before putting into refrigerator to set.
