Pillow-like Pandan Chiffon Cake

...so soft, almost like a pillow. The pandan is so fragrant...
Woohoo, I've successfully baked a chiffon cake!! And it is so soft, almost like a pillow. The pandan is really fragrant that my whole house is filled with it. Hmmm... so aromatic,... so inviting! But I think I still need to adjust on the temperature of my oven, because the cake looks a little bit darker on the outside.

This is actually my 4th attempt in baking a chiffon cake. The 1st time I baked a Pandan Chiffon Cake was 4-5 years back. I used my couzie D's recipe back then. It was a failure because I did not fold the meringue evenly, resulting in some part of the cake too tight, some part too soggy.

The 2nd time, using the same recipe, it was a failure too because the middle doesn't seems to cook when the top has already browned. I figured out it was because I did not use a tube pan.

So, the 3rd time, I use a tube pan. My hubby was in banana frenzy, I thought making a Banana Chiffon Cake would be a good idea. I found the recipe in a cake website which calls for one 18cm tube pan, where as my tube pan is 24cm. I did not know back then, I have overlooked on the size. I was happily baking away and expected a fluffy cake. At the end, I got a flat and not so fluffy chiffon cake. Actually, the 3rd attempt was partial success. The cake was edible and full of banana flavour, just that it is not a chiffon cake [lo!].

This time, I've decided to bake a chiffon cake [again] because of Best Recipes June Event for the theme "Secret of Chiffon & Roll Cakes". Seeing the wonderful ladies that participated with their beautiful chiffon cakes has triggered my inner desire - 'I want to bake a beautiful fluffy chiffon cake also...!'

Actually I wanted to bake Pandan Marble Chiffon Cake from Anncoo Journal but her recipe uses a 17cm tube pan. Then I tried searching for a recipe that uses a 24cm tube pan but I couldn't find any. So, I had to do my own comparison and analysis. I've compared recipes from Anncoo Journal, Kitchen Tigress and my couzie D, and came out with the below recipe. I called it, "Pillow-like Pandan Chiffon Cake".


PILLOW-LIKE PANDAN CHIFFON CAKE

Prep Time  : 40 mins
Cook Time : 40 mins
Total Time : 1 hour 20 mins
Makes       : 16 slices

Ingredients:
150g self-raising flour
2 tbsp corn starch
5 egg yolks
175g sugar
110ml thick coconut milk
3/4 cup canola/ vegetable oil
1/4 tsp salt
1 tsp vanilla extract

For the Pandan Juice
16 pcs pandan leaves
6 tbsp water

For the Meringue
6 egg whites
1 tsp cream of tartar
75g sugar

Directions:
You will need one 24cm tube pan.

1. Preheat oven at 160°C.

2. In a medium bowl, combine self-raising flour with corn starch, sift together. Add in salt and set aside until needed.

3. Prepare the pandan juice by blending the roughly chopped pandan leaves with 6 tbsp water. Strain and squeeze to get the juice only. You will get around 90ml pandan juice. Mix with thick coconut milk in another medium bowl. Set aside until needed.

4. Using a hand whisk/mixer, whisk egg yolks and 175g sugar till pale & fluffy. Add in the prepared coconut milk mixture, followed by oil and whisk till well combined.

5. Add in the sifted flour mixture and vanilla extract till evenly mixed.

6. In a mixing bowl, make the meringue by beating the egg whites till foamy. Add in cream of tartar and mixed for one minute. Then gradually add in 75g sugar and whisk till you get stiff peak.

7. Fold the meringue evenly into your batter in 3 batches. Scrap down the sides of bowl if needed. Drop the batter bowl on your counter top to release air pockets.

8. Slowly pour batter into tube pan to further release the big bubbles trapped in the batter. Bake for 40 mins or until skewer comes out clean.

9. When done, invert your tube pan and let it stand on a bottle or tea cup. Let it cool in pan.

Notes:
● For the 110ml thick coconut milk, I used 1 pkt of instant coconut powder diluted in 110ml warm water.

● If you have muslin cloth, use it to squeeze the pandan juice out more efficiently.

The Famous Seremban Beef Noodle @ Pasar Besar Seremban

I've long heard about the famous seremban beef noodle and have been wanting to try it for so long. Finally on the recent Sunday, I was able to sink my teeth in those softly "melt in your mouth" beef slices and tripes. Thanks to our besties for this opportunity!

We were at Seremban over the recent weekend to attend our besties' wedding dinner. It was also another long awaited desire in my list ~ that is to attend their wedding. The groom is our (me & my hubby) best buddy, so close that we were like a family. They (the groom & the bride) started dating 14 years ago. Time has brought us together and soon the girlfriend (now wife) became our besties too. When they finally broke the news to us, we were overjoyed!

Being able to see them exchanging wedding vows in the church is such a touching moment. I can truly felt their happiness and happy tears were flowing quietly.

Here, I would like to wish them many many many loving years together and may they continue to build their love on the foundation that God has built for them!

Okay, now back to the Famous Seremban Beef Noodle. So, this stall is located in a food court of Seremban wet market. Seremban wet market is just like any other ordinary wet market where you can get all sorts of local raw ingredients such as poultries and vegetables. The building itself is quite humongous, I would say. There were 3 storeys and the food court is located at the top floor.

Sugar cane were freshly prepared upon ordering. No artificial flavour with just the right amount of natural sweetness! A good choice to quench your thirst especially after walking up the 3 storeys building!

When it is served to us, the beefy aroma is really inviting. The first sip of the soup was really satisfying, and the first bite of the beef slices and tripes were really palatable!

I love it that there were slices of salted mustard vege/ ham choy in it. Didn't know that it goes so well with the soup. Good inspiration for my home-cooked beef noodle next time!

The only thing that I don't really like is the type of noodle they used. Unlike in Klang Valley whereby you can choose your own choice of noodles, here, there is only one choice of noodle - thick vermicelli called 'lai fun'. The noodle is quite bland because it does not absorb the flavour from the soup. I would prefer to have it with yellow noodle.

*I am not sure how much per bowl because we've ordered varieties and we paid in lumpsum. It was around RM7/bowl.

The thick vermicelli/ lai fun goes better with the dry version because it was drenched in the thick savoury gravy. The gravy has a stronger beefy aroma and it was very appetizing. It comes with a bowl of soup, so don't worry about not able to try the soup if you ordered a dry ones.

I would recommend that you guys try the dry version. You can only have this type here, in Seremban.

Mamee Chef Instant Noodle - Lontong Flavour

Have you guys heard of the new Mamee Chef flavour? It is one of our local favourite dishes, called Lontong. The new Lontong flavour is awesome and its new improved technology gives out a more springy noodles than the previous 'already so-good' springy noodles. It fits right to be in the Putra Brand Awards - 'The People's Choice' in Foodstuff category.

Yes, I know. With the video of the man who can't burn the instant noodles went viral, alot of peoples has stopped eating instant noodle. But my two cents is, it is okay to eat instant noodles once a while. Just don't let the younger kids consume it!

The taste is almost like curry laksa, with the same creamy texture but not as spicy as curry laksa. I am rating it a 3.8 out of 5 because I still think that Mamee Chef Tom Yam Flavour is better!

However, my hubby prefers this one better than the Tom Yam flavour. I think that is just simply because he lurvee to eat lontong... LOL.

Shepherd's Pie @ Sin & Sensibility, Jalan Ipoh

While waiting for dinner time, my friend & I went to his neighbourhood cafe for a drink and chit chat. It was a quiet late noon on Friday. We were the only customers there when we reached and it was just what we hoped for - a quiet place for a good chit chat.

Sheperd's Pie or Cottage Pie is a meat pie with crust of mashed potatoes on top. I read in somewhere that Shepherd's Pie refers to lamb, while Cottage Pie refers to beef or chicken. But I still get people calling a beef filling as Shepherd's Pie. Sometimes I feel like correcting them but was afraid I am wrong. So what do you think? Shepherd or Cottage?

I found that the mashed potatoes is abit too salty. But you can balance off the saltiness with the salad at the side. The beef filling is yummy tho'! So overall, it is not too bad. I would still consider ordering this if I come here again.

Bone & Pot Steamboat @ Setia Alam

Yesterday, my families and I had a great family bonding over a scrumptious dinner at Bone & Pot Setia Alam. It was one of those big family gathering with 16 pax of us. Having a steamboat with a big group gives us the opportunity to try out more different ingredients.

We were there around 7.30pm, and the crowd has already started coming in. Luckily we have made reservation. We were ushered inside and seated comfortably in two tables - opposite each others.

Tomyam Broth & Signature Pork Bone Broth @ RM16.00

I preferred the signature pork bone broth over the tomyam broth. The SPB is full of flavor and you can just drink it as a soup on its own.

Where else, for tomyam broth, you need to cook the ingredients in it first. After the first two rounds, the tomyam broth will begins to have its taste. For those who like spicy sourish tomyam [like my sister], this is a must for you.

Recommended Dishes
My mom's side, they've ordered the Fried Fish Skin. It was yummylicious! Tasted just like VERY crispy fish crackers.
Our table, we did not order because I was skeptical about it. If the skin was not properly prepared, it will have a very fishy smell.
*sigh* Regretted of not ordering. But we will definitely order this in our next visit.

This is another of my nieces' favourite! They can really eat alot of these. The cheese that oozes out is definitely yummy when eaten with the soft beancurd.
I think we've ordered 2-3 plates of these and I only had a chance to eat one piece, the rest were eaten by them.

My younger niece love these crabsticks. Many peoples usually overcooked their crabsticks resulting in soft wiggly crabsticks.
The correct way (well, my way) to cooking a yummy crabsticks is to cook it for just a minute or two in a hot bubbling broth. That way, you will get soft springy crabsticks.

However my hubby would preferred a more solid crabsticks. So, he will cook the crabsticks for just a mere 30 secs or less. He said crabsticks are processed food, you just need to reheat them. Yes, he is correct! And you may also cook his way, depending on how soft or solid you like your crabsticks to be.

Oh... we absolutely love these dumplings!!
I usually don't like dumpling cuz the idea of a big piece of meat wrapped inside a dumpling skin just does't entice me.
But these dumplings are different! In one dumpling, you will get the well seasoned soft meat with springy prawn and crunchy strips of black fungus. What make these dumpling specially yummy is that it has chinese corianders. The fragrance of chinese corianders goes very well with this meaty dumpling. Yummzz!!

And by the end of our dinner, our tummies are all expanded but it doesn't matter. Everyone had such a good time chatting and eating away. It was such a satisfying meal! Hope we can do this more often. I don't mind having steamboat here again!
