Chinese Style Steamed Fish


My children love to eat fishes, especially my princess! Be it steamed or deep fried, she can literally finishes a whole fish by herself. (Well, a whole fish here means 800g or less per fish)

Meanwhile on the other side..., my hubby is a little... hmm.. no, i meant is VERY finicky about fishes. He cannot takes even a tiny weeny smell of fishy smell, he would reject the whole dish! (But more shares for the kids! Haha...) That is why I must be very careful when I handle the fishes.

But also because of his high expectation, I was trained to cook 'fishy smell'-FREE fish dishes. First, I learn how to choose a fresh fish by looking at the eyes of the fish. If it is clear, then it is fresh. The clearer, the fresher! If the eyes has gone very blur, don't buy that, no matter how hard you try to clear off the fishy smell, there will still be a strong stench. And don't buy those fishes with bruises on its body, it may be a sign of stress during the struggle of getting caught. This can affect the quality of the fish.

Secondly, clean the fish thoroughly. Washed out everything from its cavity and head. There will be a blood line on its back bone. Pierce through the membrane and wash out the blood line. Don't leave any blood streaks, it will caused a fishy smell when it's cooked.

Thirdly, marinate the fish with a pinch of salt and white pepper powder. Just a pinch for both sides will do. Don't put too much of salt because we wanted to taste the sweet freshness of the fish, not a salted fish.

Lastly, before putting to steam, stuff spring onions and ginger slices in its cavity, top and bottom of the fish.

And that's it! With the 4 points above, I am sure you will never go wrong with this recipe. Happy cooking!

CHINESE STYLE STEAMED FISH
Prep Time  : 20 mins
Cook Time : 8 mins
Total Time : 28 mins
Serves       : 3 - 4 pax

Ingredients:
1 pc talapia fish/ your preferred fish (800g)
1 stalk spring onion, halves in length
8 slices ginger
A pinch of salt and white pepper

Sauce (Combine in a small bowl)
2 Tbsp soy sauce
1 Tbsp fish sauce
2 tsp sugar
2 Tbsp hot water (*)

Topping
1 stalk spring onion, finely shredded
1cm ginger, thin strips
A handful of coriander
2 Tbsp peanut oil/ your preferred oil

Directions:
1. For even cooking, score the thickest part of the fish, making 2-3 deep cuts on its flesh down to the bone. (Be careful not to cut through the bone.)

2. Lightly season the fish with a pinch of salt and white pepper, and marinate for 5 -10 minutes.

3. Insert a slice of ginger in each incisions (**) and stuff its cavity with half stalk of spring onion and few ginger slices. Then use the remaining half stalk of spring onion as a base, together with a few ginger slices. Place the fish on the base and top with ginger slices again, the head and tail. Steam on high heat for 8-10 mins, depending on the size of your fish.

4. While the fish is steaming, get ready the sauce and hot oil.

5. When the fish is cooked, transfer the fish to a new plate. Garnish with fresh ginger strips, coriander and shredded spring onions. Pour the hot oil on top of the garnish in few batches, making a sizzle sound each time. Lastly pour the sauce mixture around the fish and serve immediately.

Notes:
(*) If you are keeping the fish water which is the water accumulated on the plate while steaming, you may omit adding water to the sauce mixture. I find that fish water is good to use when your fish is really fresh and you've cleaned it thoroughly. (But because I have a fussy hubby who can detect even a 0.01% of fishy smell, I rather discard the fish water.)

(**) For the bottom side of the fish, you can cut the ginger slices vertically halves before insert into the incisions. Because it is facing down on the plate, using a whole ginger slice might be too big.

● For better timing, usually i steam the fish for 7 mins 15 secs. After 7 mins 15 secs, i'll off the heat and let it sit in the wok, untouched. The residual heat will continue to cook the fish. And at this time, I will work on my sauce and hot oil. It takes less than a minute to get 2 Tbsp of oil to sizzling hot. But if you are making this dish for the first time, it is better to prepare everything in advance.

● If you are using a bigger fish, ie 1.2kg and above, you may use a chopstick under the fish for even heat circulation.

Steamed Moist Chocolate Cake For Our Prince Charming's 1st Birthday

Since we already had an early birthday bash for our prince charming the weekend before his birthday, we thought of just buying him a cupcake on his exact birthday which was on a weekday. But his sister insisted to have a BIRTHDAY CAKE. She said, "Birthday must have birthday cake!" Hence the impromptu decision to make this steamed chocolate birthday cake with chocolate ganache on the birthday morning itself.

Steamed Moist Chocolate Cake with Chocolate Ganache

"Tadaa!! A Yummylicious Choco Cake with Colourful Sprinkles"

You can enjoy this cake either cold or at room temperature. When eaten right from the fridge, this cake tasted like mudcake - really dense, moist and chocolatey.

When it is eaten at room temperature, it is soft, moist and chocolatey. We love it either way! My hubby, he doesn't like to eat chocolate cake but he is giving two thumbs up for this cake. Definitely a keeper!

Well, I must thank my daughter for her persistence. Finally, I've tried this steamed cake recipe which I've been saving for so long. It was a perfect occasion to make this yummylicious steamed chocolate cake!

My 3 years old daughter referred her brother as "My Baby" or "My Baby Boy". She's always protecting her baby brother whenever I scolded him. She would stand in between us and say, "Don't scold my baby!", and then gives her baby brother a kiss on his head. It always melts my heart to see my daughter protecting her baby brother like that, but then, who's spoiling the baby now, huh?

This photo was taken when my son was only a few days old and the Sister has already shown her amazing sisterly love towards her newborn baby brother. The bonding between them comes naturally and grow stronger with each day passes by. When either one of them cry or laugh, the other will follow. Sometimes, they will laugh like two hyenas for no particular reason. Their movements are literally contagious, within themselves.

I couldn't believe how fast time flies! He was born just on the borderline at 37 weeks. If a day earlier, he would be known as a preemie. He was such a tiny little baby. But look at him now! A year later and he has grown so much! No matter what he is doing (except crying), it's always a joy watching him.

In this photo, the Sister is feeding the birthday cake to her baby brother. His sister would feed him with whatever food she was eating (with my permission of course), and it is one of the way she shows her love towards her baby brother. Love both of them to the moon and back!

[08 Apr 2017] Making this steamed moist choco cake for my daughter's 4th birthday as requested by herself. Added some crushed peanuts all around, it was a perfect combination with the chocolatey cake!

For an even more chocolatey cake, I've added extra chocolate ganache in between the two layers. YUm..yum...


STEAMED MOIST CHOCOLATE CAKE WITH CHOCOLATE GANACHE
(Recipe adapted from The Domestic Goddess Wannabe)
Prep Time  : 25 mins
Cook Time : 35 mins
Total Time : 1 hour
Makes       : 8 - 10 slices

Ingredients:
180g butter
200g caster sugar
200ml full cream evaporated milk
2 eggs, lightly beaten with fork
100g plain flour
50g cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla extract
1/8 tsp salt

For the ganache
100ml milk
350g semi-sweet chocolate, broken into small pieces

Directions:
You will need an 8" round cake tin, greased and lined with baking sheet/ grease-proof paper.

1. In a thick-bottomed saucepan, add butter, sugar and evaporated milk. Using low heat, stir until sugar melted. Let it cool slightly.

2. Add the lightly beaten egg and vanilla extract into the cool buttery mixture and stir to combine.

3. In a mixing bowl, sift in all the dry ingredients. Add the buttery mixture into the dry ingredients and stir well to combine.

4. Pour batter into the prepared lined cake tin. Lift the cake tin approx. 10cm from counter top and drop it on the counter top to remove large air bubbles. Repeat 2 - 3 times.

5. Steam for 35 - 55 minutes, or until skewer comes out clean. Let the cake cool completely before removing it from the cake tin.

For the ganache
6. In a thick-bottomed saucepan, heat the milk until about to come to a boil. You will notice small bubbles forming at the edges. Off the heat.

7. Add in the chocolate picess and stir until you get a smooth chocolate ganache. Pour the ganache onto the cake in a circular motion to coat the cake evenly.

8. Serve cold or room temperature.

Gorgeous Purple Sweet Potato Rose Mantou


...which calls for pau flour and baking powder... an even fluffier and light mantou...
Previously, I have tried my hands on a Classic White Mantou recipe which calls for only all-purpose flour. The texture were soft and fluffy. Today, I tried another recipe which calls for pau flour and baking powder. The result was an even fluffier and light mantou. And in this recipe, sweet potato was added for flavor.


I simply love how these gorgeous rosebuds came to live after steaming. The rose mantou were light and fluffy. It was like being served a bouquet of gorgeouslicious purple sweet potato rose mantou. My daughter was so amazed, she said, "Wow, mommy pau pau flower very nice.... Good job, mommy!" And she had two pieces, one after another.

The steamed purple sweet potato was blended into a very fine paste. You can substitute the purple sweet potato with other similar paste if you want, just make sure that the consistency is around the same. And make sure to adjust the sweetness accordingly.


GORGEOUS PURPLE SWEET POTATO MANTOU
(Recipe source from Table For 2)
Prep Time  : 237 mins
Cook Time : 36 mins
Total Time : 4 hours 33 mins
Makes       : 26 pcs rose mantou

Ingredients:
250g purple sweet potato
200ml water
11g instant yeast
500g pau flour
1 tsp baking powder
100g castor sugar
50g shortening
1/4 tsp salt

Directions:
1. Peel sweet potato and cut into large cubes. Steam for approx. 30 mins or until soft. Add steamed sweet potato and roughly 100ml water to a food processor and blend to get a very fine paste.

2. With the remaining water (100ml), add instant yeast and let the yeast mixture sit for 5 mins until it turn frothy.

3. In a large mixing bowl, stir to combine all ingredients except shortening with a sturdy spatula/ wooden spoon until all dry ingredients are moistened. Add in shortening and knead until the dough is smooth, approx. 15 minutes. (The dough may seems sticky at first, just continue kneading until the gluten formed)

4. Cover with cling wrap and let the dough rest for one hour or doubled in size. Punch down the dough to release air. Knead for 1-2 minutes.

5. At this point, the dough is ready to be shaped. Divide the dough and form as you wish.

(As I worked on the dough, it has begun to rain. Hence the poor quality of photos due to lighting. Sorry!)
[Photo Inset: Left] For rose bud mantou, divide dough into 15g balls. Cover with cling wrap and let the balls dough rest for another one hour.
[Photo Inset: Right] Flatten the balls dough with a rolling pin. Each set of rosebud will need 6 balls, so work in a group of 6 balls.

[Photo Inset: Left] Press down the side of the circle dough with your fingers to flatten even more and to create ripples. Arrange the 6 circles dough from the bottom to the top, overlapping the previous dough by half. Start rolling upwards from the first piece of dough. (In photo above : Right side is bottom)
[Photo Inset: Right] Cut the dough into halves. Now, you will have two rosebuds. Arrange them on muffin liners.

6. Cover the formed dough with a cling wrap. Let them rest to doubled in size or approx. 45 minutes. Steam for 12 minutes.

7. Enjoy hot/ warm!

Notes:
● The mantou can be stored in freezer for up to 3 months. Just reheat in a steamer for 5 mins after taking them out from freezer.

Classic White Mantou

Mantou or Chinese steamed buns are originated from Northern China. They are eaten as a staple food where wheat is grown. According to a popular Chinese legend, the name 'mantou' is said to have came from a tale about Zhuge Liang.

CHINESE LEGEND ON THE ORIGIN OF MANTOU

...instead he made an offering with buns stuffed with slaughtered livestock and shaped like human heads...
During the Three Kingdoms period, Zhuge Liang was supposed to made a ritual offering of 49 men heads and have them thrown into the swift-flowing river to appease the river deity. But he doesn't want to sacrifice his own men, instead he made an offering with buns stuffed with slaughtered livestock and shaped them like human heads. After that, they successfully crossed the river. Since then, the buns are known as 'mantou' (barbarian's head 蠻頭).


In my quest to find a fluffy classic mantou recipe, I've stumbled upon many recipes. While most of the time, pao flour was used, there are also recipes that uses self-raising flour. But since I am looking for a classic mantou recipe, I wanted to use a recipe that calls for wheat flour or all-purpose flour. After some digging thru' the many recipes online, I've finally found a perfect classic mantou recipe.


This mantou is soft and fluffy. It has a hint of sweetness so it is just as good whether you eat it by itself or with dipping, or stuffed with filling. Yummylicious!

To get smooth surface mantou, make sure that the steaming water does not drip onto your mantou during steaming.

If your steam cover is flat (as per photo left), not the dome type, then you will need to wrap a cloth around the steam cover so that the steaming water will not drip onto the mantou.

If there are water dripping on the mantou, the surface will be wavy and wrinkled-looking, and your mantou may be wet too.


CLASSIC WHITE MANTOU
(Recipe adapted from GinsKitchen)
Prep Time  : 110 mins
Cook Time : 20 mins
Total Time : 2 hour 10 mins
Makes       : 8 pcs

Ingredients:
2 tsp instant yeast
300ml lukewarm milk
500g all-purpose flour, sifted
3 Tbsp + 1 tsp castor sugar
1 tsp vegetable oil

Directions:
1. In a small bowl, add instant yeast and a teaspoon of sugar to lukewarm milk. Stir and let the yeast mixture turn frothy.

2. In a large mixing bowl, stir to combine all ingredients with a sturdy spatula/ wooden spoon until all dry ingredients are moistened. Knead with your hand as you continue to combine all ingredients in the mixing bowl, for approx. 5 mins. Let rest 5 minutes. Transfer to a lightly floured surface and knead until dough is smooth, for approx. 5 minutes. Place dough in a mixing bowl and cover with cling wrap. Let the dough rest for one hour or doubled in size. Punch down the dough to release air.

3. On a lightly floured surface, roll out the dough to a 25” x 6” rectangle. Fold 1/3 to the centre and dust off any extra flour before folding in another 1/3. Roll it out again to approx. 17” x 10” rectangle and brush the surface with water.

4. From the longer edge, roll the dough tightly to form a log. Trim off the sides of the log to make it even. Cut log into half and cut half again in each halves making it altogether 8 pieces buns.

5. Place each bun onto a muffin liner and arrange them in the steamer. Pour cold water in the steamer and let the buns rise for 20 minutes. Steam the buns for 20 minutes until they are cooked and puffed up.

6. Serve right from steamer!
