Honeydew Sai Mai Lo (Honeydew Sago Dessert)


Sai Mai Lo or Sago Soup is a famous dessert originated from Hong Kong. It is made with sago/ tapioca pearls, coconut milk and evaporated milk. Other ingredients can be added such as honeydew, mango, taro or watermelon. Usually it is eaten cold, altho' some peoples will prefer it hot.

With the scorching hot weather lately, this refreshing and cooling dessert is a good treat to serve your family. My hubby love this dessert a lot and he is very happy to be able to enjoy his favorite dessert at the comfort of his own home.. thanks to his Chef-Wifey! haha...

Actually I hesitated to post this recipe online because the dessert looks very pale with the whitish fruit instead of looking refreshing green. This is because the honeydew that I've bought was white (hence the whitish looking dessert) and not sweet. But good thing that the fragrant of the honeydew was still there. Other than looking pale, the dessert tasted great!

So, since it is so hot nowadays, lastly I've decided to post this recipe. Hope you all will benefit from it! Enjoy my recipe!


HONEYDEW SAI MAI LO (HONEYDEW SAGO DESSERT)

Prep Time  : 35 mins
Cook Time : 20 mins
Total Time : 55 mins
Makes       : 6 dessert bowls

Ingredients:
1/2 honeydew (cubed)
1/2 honeydew (pureed)
1 cup sago/ tapioca pearls
1 cup thick coconut milk
1/2 cup evaporated milk (optional)
1 cup castor sugar
1ℓ water

Directions:
1. Cut the honeydew into cubes or your desired size. For another half of the honeydew, make into puree. Store both in refrigerator until needed.

2. In a medium pot, bring water to a boil. Add in sago and cook sago until translucent, approx. 10 minutes. Stir constantly to avoid sago from sticking together.

3. Scoop the cooked sago directly into a big bowl of cold water to stop the cooking process. Stir and rinse thoroughly. Place the sago in a bowl of cold water and chill in refrigerator until needed.

4. In a medium pot, dissolve sugar in 1ℓ water over medium high heat. Once boiling, reduce the heat to lowest. Add in thick coconut milk and evaporated milk. Stir to combine. Let the mixture simmer until slightly bubbly. Off the heat. (You will see little bubbles at the sides.)

5. Leave to cool before chilling in refrigerator, chill for approx. half an hour. Add in the honeydew cubes, puree and sago pearls in the coconut mixture and continue to chill for at least 3 hours.

6. Serve cold.

Notes:
● The honeydew that I've got is not sweet, so I added 1 cup of sugar. If you are able to get a good sweet honeydew, reduce the sugar by 1/4 cup and adjust the sweetness accordingly.

● You may also add Glass Jelly/ 'Leung Fun' to the dessert.

Candied Mandarin Orange Peel


If you still have mandarin oranges in your house (i still have plenty...), this is a good recipe to make use of them (the peels). For the fruits, you can make them into fruit juice, marmalade or even incorporate them into your desserts later; ie cakes or ice-cream.

For this recipe, I am using peels from 3 mandarin oranges to get approx. 3/4 cup of candied peels. You may double or triple the recipe as you like. Hope you'll enjoy my recipe!


CANDIED MANDARIN ORANGE PEEL
Prep Time  : 15 mins
Cook Time : 130 mins
Total Time : 2 hours 25 mins
Makes       : approx. 3/4 cup of candied peel (+ 200ml of sugar syrup)

Ingredients:
3 mandarin oranges rind
Castor sugar

Directions:
1. Put the orange rind in a colander and pour boiling water over them. Scrub with a new sponge (*) to remove the wax and rinse under running tap water.

2. Place the rind in a small pot and fill with just enough water to cover them. Bring to a boil, and let simmer for 5 minutes. Strain and discard the water.

3. Repeat Step 2. Scrap away the pith/ white part underneath the rind with a knife. After two rounds of boiling, the rind should be soft enough to make the scraping easier.

4. Cut the rind into julienne or desired size. Return the julienne rind into the small pot and fill with 500ml water. Bring to a boil and let simmer for 30 mins. Strain and keep the water.

5. You should have around 300ml water. Add equal amount of sugar (in ml) to the water, add the julienne rind and bring to a boil. Let it simmer for 40 mins or until the rind looks translucent. Turn off heat and leave the sugar syrup to cool slightly.

6. Strain the julienne rind from the syrup. (**) Arrange the julienne rind in one layer on a wire rack and let it bake in a preheated oven at lowest temperature for approx. 45 mins or until dry.

7. Immediately after removing from oven, toss the julienne rind in a shallow dish filled with 4 tablespoons of castor sugar. Using a thong, turn the julienne rind around so that each strip is well coated with castor sugar. Let the rind cool completely before storing them in an airtight container.

Notes:
● In Step 5, I've 300ml water. Using a measurement cup, I've added 300ml of sugar. You don't have to purposely take out your kitchen scale for this, just use measurement cup will do.

● If you don't have an oven, you may let the rind to dry under the sun or simply leave it on the table. But be sure to arrange them in one layer.

(*) You may also use toothbrush to remove the wax.

MANDARIN ORANGE SUGAR SYRUP
(**) You should have around 200ml of sugar syrup. Keep it for making your desserts or drinks; ie coffee.

King of Fruits, Mr. Durian!

For two weekends consecutive, we had durians for supper. Yes, just durians! It was my hubby's idea. Apparently he was having durians fewer and got me infected. We bought our durians from the stall at the roadside nearby our home. Nowadays, they (the sellers) were so clever to open their stalls at the roadside in residential area. It was so convenient for us to buy the durians when we are on our way home.

Durians are also known as King of Fruits. It is a tropical fruit that has formidable thorn covered husk, unique odour and custard like flesh. Even with the husk still intact, you can smell the durian from afar. It is a fruit that you will either love it or hate it! Me and my hubby falls in the "Love it" category!

Durians have even been in the Bizarre Food show on AFC. The daring host, Andrew Zimmern can swallow any bizarre food down his throat but not this peculiar fruit that is known as King of Fruits. I guessed he's one of the thousand peoples that falls in the "Hate it" category.
